Happy August! Lately it’s been suuuuper hot where I live and I truthfully haven’t felt like spending that much time in the kitchen. One of the most refreshing things to eat in the heat of summer is a big bowl of fruit salad. That’s why I perfected this rainbow bowl of fruit salad with a delicious citrus yogurt dressing!
You can change out any of these fruits to something you’d like more but I highly recommend this berry and tropical blend!
What’s in this fruit salad:
- Strawberries (honestly what’s a fruit salad without strawberries…)
I’ve used canned mandarins and pineapple for ease, but if you’d like to use fresh versions, that’s perfectly fine! Just prepare for it to take a liiiitttle bit longer.
Citrus Yogurt Dressing
There are a bunch of ways to dress a fruit salad. Leave it bare and let their juices do the work, whipped and creamy, simple honey dressing, or a simple yogurt dressing. I chose to go with the later and spruce it up a bit!
The dressing has a combination of honey, vanilla, and citrus flavors and it pairs so nicely with this big bowl of fruit.
Next time you need to bring a dish to a BBQ or birthday party, I highly recommend trying this fruit salad with citrus yogurt out!
One very very important note!!!
I wouldn’t put this all together until you’re about to serve it! The tropical fruits tend to leak their juices a lot and the blackberries turn everything purple. But most importantly, do NOT add the yogurt dressing until serving!! Please trust me on this. If it sits for too long, the fruit juices will alter the dressing too much, leaving it pretty sour tasting. I’ve tested this myself and believe me, it’s a totally different end product.
If you want to prepare this ahead of time, I’d recommend cutting up all the fruit and storing them in baggies in the fridge. You can make the dressing and store it in a sealed container and it should keep for a few days. When you’re ready to serve, gently combine everything in a large bowl.
Fruit Salad with Citrus Yogurt Dressing
- 2 kiwi , chopped
- 1 can mandarins , drained and juice reserved
- ½ can pineapple slices , chopped
- 1 cup strawberries , sliced
- 1 cup blackberries , sliced
Citrus Yogurt Dressing
- 3 oz vanilla yogurt
- ½ tsp lemon zest
- ½ Tbsp lemon juice
- ½ Tbsp mandarin juice
- 1 tsp honey
- Drain and reserve juice from mandarin can
- In a small bowl, whisk together yogurt, lemon zest, lemon juice, mandarin juice, and honey
- Prep and cut strawberries, blackberries, kiwi, and pineapple
- When ready to serve, add all the fruit into a large bowl and gently mix in yogurt dressing until all fruit is covered ***
