Another toast recipe coming at ya! If you can’t tell, I love easy peasy breakfast ideas and refuse to sacrifice on flavor. You can whip this ricotta jam toast up in literally 5 minutes and be out the door (or stay in your pj’s because there’s still a pandemic people!)
Feel free to use whatever kind of toppings you want on this. I chose raspberry preserves and fresh blackberries but this would work with any combination of things.
There is apparently a place in LA called Sqirl that has a famous ricotta jam toast on a GIANT slice of toasted brioche that looks divine. I’ve never been, as I live on the other side of the country, but it speaks to me from thousands of miles away.
Pretty self explanatory, but the first step is to pop your bread into the toaster. Then you’ll plop your ricotta into a mixing bowl and whip that baby up until smooth and whipped texture. You can use an electric beater for this, and I recommend that if you’re increasing the number of servings in this recipe, but it’s possible to whisk by hand as well. You can top them with fresh berries or fruit, or completely omit, and enjoy!
If ricotta isn’t your thing, you don’t have any on hand and you’re craving this, or you just don’t want to spend the money on it, no worries! Feel free to swap the ricotta out with cream cheese and add just a pinch of salt. No promises that it will be the same, but it’s a pretty good swap in my opinion.
I used sourdough bread in this recipe since it’s what I had on hand, but I would say if you’re going for a perrrrrfect toast, grab brioche. I recommend using the rest of the loaf and ricotta for Chrissy Teigen’s French Toast with Whipped Honey Ricotta Topping. That recipe straight up blew me away!
Ricotta Jam Toast
- 2 slices sourdough , or favorite bread
- ½ cup ricotta , whipped
- 3 Tbsp jam or fruit preserves
- ¼ cup fresh fruit , optional
- Pop bread in the toaster
- Using an electric mixer or whisking by hand, whip the ricotta until smooth and forms a whipped cream texture (about 2-3 minutes)
- When toast is ready, spread whipped ricotta and layer with jam. Then top it off with some fresh fruit if using
