S’mores Brownies with Marshmallow Fluff


No campfire? No problem! Impress your friends and family with these delicious s’mores brownies with marshmallow fluff! Tastes like the real deal… no wait… actually BETTER!

S’mores are summer and fall’s favorite outdoor treat, but what do you do when you’re craving the graham cracker, chocolate, and marshmallow goodness while at home without access to a fire? Sure, you can roast the marshmallows over your stove and hope it all turns out okay. OR you can make these brownies that are a million times better. Trust me on it!

S’mores Brownies Layers

Naturally, we’re going to use typical s’mores layers for this baked treat.

  1. Graham cracker crust
    • Mixing graham crackers, butter, and brown sugar to replicate the base of your every day s’more
  2. Mocha brownie center
    • We’re going to melt down chocolate chips to create the best brownies, then add in some espresso powder. The espresso powder truly brings out the rich chocolate flavors!
  3. Marshmallow fluff topping
    • Obviously the best part. This recipe calls for pre-made marshmallow fluff to make it super easy for you. If you have a recipe you’d like to make fluff at home, feel free to use that instead!

Toasted Marshmallow Topping

Toasting the marshmallow is the trickiest part of the recipe. I’ve accomplished this by putting them under the broiler, but if you somehow have a blow torch at home, I’d recommend using that instead!


I actually put my brownies on the second shelf of my oven since my brownie pan was a bit too high to go under the broiler and I really didn’t want to catch my oven on fire. Only put them in for 1-2 minutes initially and keep an eye on them! If it needs more time, that’s fine, but it will burn FAST so don’t walk away from it!

Graham Cracker Crust

  • 2 cups grahams cracker crumbs
  • ½ cup butter , melted
  • 2 Tbsp brown sugar

Mocha Brownie

  • ½ cup butter
  • 8 oz semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • 3 eggs , at room temperature
  • 1 tsp vanilla extract
  • ½ cup + 2 Tbsp all-purpose flour , spooned and leveled
  • 2 Tbsp cocoa powder
  • 2 tsp espresso powder
  • 1/4 teaspoon salt

Marshmallow Topping

  • 8 oz + marshmallow fluff


Graham Cracker Crust

  • Preheat oven to 350°F and line 9×9 inch pan with tin foil
  • In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Using a fork to ensure it's all mixed evenly and turns a rich golden color
  • Spread mixture into pan and press it REALLY hard into the bottom, creating a solid crust
  • Bake for 10 minutes and remove from oven

Brownie Layer

  • Combine butter and chocolate chips in a microwave safe bowl and microwave in 15 second intervals (stirring in between each interval) until butter and chocolate is completely melted together. Set aside to cool for 10 minutes
  • In one bowl, combine flour, cocoa powder, espresso powder, and salt together and set aside
  • Once chocolate mix is cooled, whisk in sugar to the mix. Then beat in eggs one at a time, and mix in vanilla extract
  • Gently mix in dry ingredients just until combined*
  • Pour brownie mix on top of graham cracker crust and bake at 350°F for 33-35 minutes, or until a wooden skewer comes out clean
  • Remove from oven and let it cool for 15-20 minutes

Toasted Marshmallow Topping

  • Gently spread marshmallow fluff on top of brownie layer**
  • Set broiler to high and move oven rack to the 2nd shelf***
  • Keeping an eye on the brownies, broil for 1-2 minutes until marshmallow is toasted to your liking
  • Remove from oven and let it cool before serving


* Do not over-mix brownies! Gently and slowly stir dry and wet ingredients just until you no longer see a bunch of flour 
** It’s easier to spread if the marshmallow is a little warmed up. You can heat up a spoon by running it under hot water for easier scooping. Once it’s on the warm brownie layer, it should become runnier and easier to spread around 
*** Moving shelf to the 2nd spot is recommended if your brownie pan is too high to fit under the broiler. You don’t want to start a fire! Don’t worry, you will still get the toasted look!
