This sunshine smoothie is exactly what it sounds like: pure sunshine in your mouth! This 5 ingredient smoothie will surely brighten anyone’s day.
I’m a big smoothie person and love experimenting with different fruits and flavors. I’ve made my fair share of gross ones that I couldn’t even TRY to drink. Yeah… I’m looking at you mint chocolate smoothie.
But this sunshine smoothie is one of my favorites!
What’s in this Sunshine Smoothie?
- Orange Juice
- Ice (optional)
I’ve chosen to use frozen fruit because that’s usually what I have on hand. I tend to never use fresh fruit fast enough before it goes bad, so I’ll buy frozen or freeze what I buy fresh. If you are using frozen fruit, you may not need any ice in this recipe, however if you’re using fresh, you most likely will.
What does ice do?
Weirdly enough, ice thickens smoothies. I used to think for a while that it would thin it since it’s water, but I was very wrong. I won’t pretend to know the chemistry behind it all, but all I know is frozen = thick.
Just to name a few:
Mango: Mango contains a good source of fiber, has folate, and vitamins A, C, and E.
Banana: First one is obvious, but bananas contain potassium, vitamin B6 and vitamin C.
Oranges/Orange juice: Like mangoes, oranges contain fiber, folate, and vitamin C.
If these vitamins don’t help shine some light on your day, I’m sure the taste and color will!
In this recipe, I’ve used bottled orange juice but you can most certainly replace it with fresh squeezed OJ. This is a great option if you are looking to cut out added sugars.
This smoothie makes two 8 oz smoothies, or one 16 oz smoothie. I’ve found that an 8 oz cup is nice for a little refresher or snack, but if you want to fill up, keeping this recipe all to yourself is the way to go.
- 2 cups frozen mango , chunked
- ¾ cup orange juice
- 2 oz greek yogurt
- 1 frozen banana , sliced
- Ice to thicken , optional
- Slice banana and cut mango into pieces (if using fresh mango)
- Add mango, banana, orange juice, and yogurt to blender
- Blend on medium power until smooth, scraping down the sides if needed
- Add ice ¼ cup at a time to thicken as needed
- I used frozen fruit in this recipe and did not need to add any ice since it was pretty thick.
- If it’s too thick, add more orange juice!
