This is a good one y’all. Actually, it’s a great one! I’m addicted to Starbucks’ Pumpkin Cream Cold Brew and would literally buy it every day if I could afford to. If it were possible, I would honestly eat that pumpkin infused foam straight from a bowl.
I’ve seen people make versions of this drink and tried my hand at one and it changed me. I knew I didn’t need to drive to the store, pay a bunch of money, and waste another plastic cup ANYMORE. The recipe I followed used heavy cream and a TON of white sugar. It tasted absolutely fantastic, but I knew that wouldn’t be sustainable for my health if I wanted to keep my addiction alive.

Healthier Pumpkin Cream
Dairy Free Alternative
This recipe uses canned coconut milk instead of heavy cream or half and half to help those who are vegan or are dairy free. You can swap this out with any other dairy free milk, but I haven’t tested that, so I can’t speak to the flavor difference.

Sweetener
Maple syrup is the sweetener in this recipe, as opposed to a ton of sugar used in other recipes. The good thing about using maple syrup is that it is healthier than refined sugars and best of yet, it actually cuts down the time needed in this recipe. Using granulated sugar requires you to heat it over the stove in a liquid (cream) until it dissolves. This leaves your cream hot and needing to cool down before adding to your cold brew, takes much longer, and leaves more dirty dishes! Using maple syrup lets you whisk together everything in one bowl or glass and ready to use immediately!

Pumpkin Cold Foam
Okay, now the only downfall to this at home recipe is the fact I cannot get this foam to sit on top of the coffee like Starbucks does. They must do some magic, but I’ll work on it and update you all later if I can get it right. But don’t let that discourage you- this tastes just like the real deal (just a creamy version of it!).


Vegan Pumpkin Cream Cold Brew
Ingredients
- 1 cup coconut milk canned
- 1½ Tbsp pumpkin puree
- 1½ tsp vanilla extract
- 3 Tbsp maple syrup
- 1½ tsp pumpkin spice
Instructions
- In a mason jar, whisk or froth together ingredients
- Add as much as you'd like to a cup of cold brew coffee and top off with some ice
