S'mores Brownies with Marshmallow Fluff

No campfire, no problem! These s'mores brownies with marshmallow fluff are super easy and the best way to eat a s'more!

Graham Cracker Crust

  • 2 cups grahams cracker crumbs
  • ½ cup butter , melted
  • 2 Tbsp brown sugar

Mocha Brownie

  • ½ cup butter
  • 8 oz semi-sweet chocolate chips
  • ¾ cup granulated sugar
  • 3 eggs , at room temperature
  • 1 tsp vanilla extract
  • ½ cup + 2 Tbsp all-purpose flour , spooned and leveled
  • 2 Tbsp cocoa powder
  • 2 tsp espresso powder
  • 1/4 teaspoon salt

Marshmallow Topping

  • 8 oz + marshmallow fluff


Graham Cracker Crust

  • Preheat oven to 350°F and line 9x9 inch pan with tin foil
  • In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Using a fork to ensure it's all mixed evenly and turns a rich golden color
  • Spread mixture into pan and press it REALLY hard into the bottom, creating a solid crust
  • Bake for 10 minutes and remove from oven

Brownie Layer

  • Combine butter and chocolate chips in a microwave safe bowl and microwave in 15 second intervals (stirring in between each interval) until butter and chocolate is completely melted together. Set aside to cool for 10 minutes
  • In one bowl, combine flour, cocoa powder, espresso powder, and salt together and set aside
  • Once chocolate mix is cooled, whisk in sugar to the mix. Then beat in eggs one at a time, and mix in vanilla extract
  • Gently mix in dry ingredients just until combined*
  • Pour brownie mix on top of graham cracker crust and bake at 350°F for 33-35 minutes, or until a wooden skewer comes out clean
  • Remove from oven and let it cool for 15-20 minutes

Toasted Marshmallow Topping

  • Gently spread marshmallow fluff on top of brownie layer**
  • Set broiler to high and move oven rack to the 2nd shelf***
  • Keeping an eye on the brownies, broil for 1-2 minutes until marshmallow is toasted to your liking
  • Remove from oven and let it cool before serving


* Do not over-mix brownies! Gently and slowly stir dry and wet ingredients just until you no longer see a bunch of flour 
** It's easier to spread if the marshmallow is a little warmed up. You can heat up a spoon by running it under hot water for easier scooping. Once it's on the warm brownie layer, it should become runnier and easier to spread around 
*** Moving shelf to the 2nd spot is recommended if your brownie pan is too high to fit under the broiler. You don't want to start a fire! Don't worry, you will still get the toasted look!
